Chinese Takeaway Noodles

We're going to put our necks on the line here because we think these are really good and they can be quite healthy too. You need a small amount of ingredients and you can enjoy a really authentic noodle dish at home. You can obviously supplement these with any additional items which you enjoy, but this is how we like them.


Ingredients:

  • 1 brown onion

  • ½ bag Mangetout (plus any other vegetables you’d like to add)

  • 5 tbsp light soy sauce

  • 3 tbsp Ketcap Manis (available on Amazon)

  • 1.5 tbsp Sesame or Ground Nut oil  

  • 1 squeeze of chilli paste

  • 2tbsp rice wine vinegar

  • 2 x portions of ready-to-wok vegan noodles (I used Asda’s)

Method:

  1. Stir fry your onion, mangetout and other vegetables that you have chosen in a splash of oil – the wok will need to be hot; keep stirring to avoid any burning.

  2. Add the noodles to the wok and then your seasonings: light soy sauce, oil, Ketap Manis, chilli paste and rice wine vinegar. Stir to coat and ensure that the liquid reduces and glazes the noodles.

  3. Taste the noodles and decide if you require more of any of the seasonings, or perhaps some salt. 

  4. Serve when piping hot.
